Do you ever want some queso but feel a bit more fancy, so you don’t want the canned queso? If so, then this recipe is for you! Usually, I eat a bowl of this queso with some chips, but you can serve it with whatever you like.

 

(This recipe makes six quarts of queso.)

 

Ingredients:

  • 1 stick of butter
  • 1 large sweet yellow onion (diced)
  • 3 4 oz cans of hatched chopped mild green chiles
  • 1 family-size can of cream of mushroom soup
  • 1 8 oz package of Philadelphia cream cheese
  • 2 lbs Velveeta cheese (cut into cubes)
  • 4 cups Mexican blend shredded cheese
  • Enough milk to make consistency as preferred (1-2 cups)

 

Crock Pot Directions:

 

Melt butter over medium-high heat in a small saucepan or frying pan while chopping the onion. Saute onions until translucent; you can saute them as long as you want, as long as you don’t burn them. 

 

Transfer sauteed onions and all other ingredients except milk into a crock pot and cook on low heat for two hours or until all cheese has melted. Then, add the milk and stir until you get the desired consistency. Turn the temperature to warm to keep the queso hot for serving. Then, serve and enjoy!

 

Instant Pot Directions:

 

Alternatively, you can make the queso in a six-quart instant pot. This way, you can saute the onions in the instant pot and have fewer dishes to clean. Press the saute button on the instant pot and put the butter in. You don’t have to wait for the instant pot to say it’s hot before you put the butter in. Saute the onions until they are translucent and soft, or as long as you want, as long as you don’t burn them. Dump in the chiles and the mushroom soup and stir well. Turn the instant pot off and hit the keep warm button. Add all of your cheeses and put on the lid. 

 

DO NOT PRESSURE COOK YOUR QUESO, or it will stick to the bottom of the pot. You can melt everything using the saute button just stir constantly, so it doesn’t stick. Then, turn off your instant pot on the keep warm button. Stir in your milk to get the queso to your desired consistency you can use the keep warm button as long as you want just make sure to keep the lid on to keep it at the perfect temperature. Serve and enjoy!
