My mother found this recipe in an old recipe book she had written over the years. Who she got the recipe from, I have no idea. This lemon pie was the first pie I have made, so it has a lot of sentimental value, and it’s good too.

 

  • 1 cup of sugar
  • 2 tablespoons of all-purpose flour
  • 3 tablespoons of cornstarch.
  • 1/2 teaspoon of salt
  • 1 and a half cups of water
  • 2 lemons juiced and zested
  • A teaspoon of lime juice (optional)
  • 2 tablespoons of butter
  • 4 egg yolks (beaten)

 

Whisk together the sugar, flour, cornstarch, lemon zest, lemon juice, and then the salt. Add in the water, then stir on medium or high heat and stir frequently until boiling. Add in the beaten egg yolks slowly and stir while adding in the eggs. When this is done, stir until eggs are stirred in without scrambling them. When it is fully incorporated add either to store-bought pie crust or homemade pie crust. Lastly, you can sprinkle some leftover lemon zest on top. Enjoy!
